  • Unsalted Butter – 1/2 cup melted, 115 g
  • Heavy Cream – 1/4 cup 60 ml

Instructions
 

  • Prepare the Pan:
    Preheat your oven to 375°F (190°C).
    Butter and flour a Madeline pan thoroughly, or use non-stick spray. Set aside.
  • Mix Dry Ingredients:

  • Whisk Eggs and Sugar:
    In a separate large bowl, beat the eggs and sugar with a hand or stand mixer until pale, thick, and fluffy (about 3-4 minutes).
  • Add Flavorings:
    Mix in the vanilla extract and optional lemon zest for added aroma and flavor.
  • Incorporate Cream and Butter:
    Gently fold in the heavy cream and melted butter using a spatula until well combined.
  • Combine Wet and Dry:
    Gradually add the dry ingredients to the wet mixture, folding gently to avoid overmixing. The batter should be smooth and slightly thick.
  • Fill the Pan:
    Spoon the batter into the prepared Madeline pan, filling each mold about 2/3 full.
  • Bake:

  • Cool and Remove:
